Elizabeth suggests you have it ready to bring on a long hike to energize you. Wrap yourself up in a couple layers and head out with a tasty afternoon snack. Or, sooth winter’s chill and enjoy it after you get back in a cozy, warm living room in front of the fire.

Remember myth #1: chocolate is bad for your skin…..uh, no it’s not! As long as you’re getting the dark chocolate!

Follow this delicious recipe or personalize by purchasing your favorite mixed nuts and adding chocolate chunks and your favorite dried fruit!

Ingredients:

 2 plain rice cakes, crumbled

8 dried apricots, chopped

1 cup golden raisins

1 cup brown raisins

1 cup raw whole almonds

1/2 cup walnuts

1/2 cup sunflower seeds

1 cup goji berries (potent antioxidant)

1 1/2 cups of raw chocolate chips, or cocoa nibs

Place all ingredients in a large bowl and stir to combine.

*Yields 6 to 8 servings
